Since a lot of my friends think that eating healthy is expensive, I challenged myself to poorgirleatswell.com's $25 shopping cart. I SUCCEDED with $3 to spare. Before I went out to shop, I checked Food on the Table to see which stores near my area had the best prices. Then I looked for recipes and checked what ingredients I already had at home.
With The Game On Diet book, recipe and grocery list in hand (and 32 oz of water), I headed out to ShopRite and bought only what I needed for the week. Eyes on the prize, baby! No splurging allowed! It’s not as impressive as PGEW's shopping carts but it's a start!
run away from weakness
This week has not been a great week for me! I totally dropped the ball after a perfect first week. So typical of me. But I’m not going to beat myself up. Instead, I’ll focus on what I CAN DO to make up for the last 3 days of laziness and sluggishness. I have 4 days left in Week 2. I’m going in HARD.
Lunch, Day 5: Grilled Turkey burger, Grilled Pineapple, and spinach salad.
While everyone was munching on ribs and lechon kawali during our Father’s day BBQ, I was having this delicious healthy grill turkey burger. I still can’t believe I made this from scratch! So proud of myself! :D
Recipe for the patty can be found here. Additional not: make sure the cheese is covered with enough meat or it will ooze out like mine did! :(
As for the pineapple, I drenched it with lime juice and seasoned it with salt and pepper then grilled it for a couple of minutes on each side. That’s it! A happy tummy :)
Always believe in yourself because nobody is going to run the race for you.
Dinner, Day 4: Open-faced Turkey Burger
Whole wheat hamburger bun, Tzatziki sauce instead of mayonnaise, spinach, tomatoes, turkey patty, and fat-free swiss cheese.
I MADE THE PATTIES FROM SCRATCH! UNBELIEVABLE! Apparently burger patties aren’t that hard to make!
Super healthy patties:
- 1lb lean ground turkey
- 1 cup chopped spinach
- 1/2 cup bell pepper
- Small white onions
- a pinch of dried oregano
- a pinch of dried thyme
- 1 tbsp egg whites
- 1/8 tsp salt
- 1/8 tsp pepper
Mix it all together in a bowl. Make palm sized patties, and in the middle of the patty I stuffed some with 1-inch size cheddar cheese sticks, and some with fat-free Feta cheese. Grilled is best but I fried mine in a nonstick skillet. YUM.
Took me 40mins to make wash, chop, mix, taste test a bit of the mixture, approve it, make the patties, fry one for dinner. Number of patties will depend on the size of your palm. I made 9 patties out of this recipe.
